Pantry Staples

Many of these cookie recipes call for common ingredients. Here are some of my favorites:

  • Gluten-free flour: After trying several gluten-free flour blends, my current favorite is King Arthur measure-for-measure flour because it gives me the best results in terms of flavor and texture. Another popular gluten-free flour that typically performs well (though sometimes I find it to have a drier result) is Bob's Red Mill gluten-free all-purpose baking flour.
  • Dairy-free butter: Made from cashews and coconut oil, Miyoko's cultured vegan butter has a great taste and is palm oil free.
  • Dairy-free chocolate: Enjoy life chocolate chips are a tasty option and tend to be available at most grocery stores. You can also check the ingredients of many dark chocolate bars as some will not have dairy as well.
  • Gluten-free oats: Oats add great texture to many cookies on this list. If you do not have an allergy or celiac disease, you may be alright with any oats. However, if you need oats free from gluten contamination, Bob's Red Mill offers both old-fashioned and quick-cooking gluten-free oats.
  • Salt: So many cookies benefit from a little sprinkle of salt on top to balance the sweetness! I love Maldon smoked sea salt flakes, but whatever coarse salt is available at your grocery store will also work great!

Equipment

While you may already have a baking sheet and a mixing bowl, here are a few other helpful pieces of equipment for your baking endeavors:

  • Stand mixer: If you are looking to upgrade from a hand mixer, or you love to bake regularly, this classic piece of kitchen equipment may be worth the investment for you.
  • Cookie scoop: Using a cookie scoop can help to give very uniformly sized cookies.
  • Cooling rack: Using a wire rack is the best way to get your cookies cooled quickly. This is especially helpful for gluten-free cookies as they tend to be a little more likely to fall apart when warm than their gluten-containing counterpart.

FAQs

How do you get gluten-free cookies to stick together? ›

Remember: Xanthan Gum is Your Friend

It might sound scary, but xanthan gum is key for successful gluten-free baking. It helps bind together the ingredients, preventing your cookies from falling to pieces. Be careful to not use too much; no one likes gummy baked goods.

How do you thicken gluten-free cookies? ›

Chilling the dough for at least several hours results in cookies that are extra-thick and chonky because it allows the flours to absorb more moisture.

How can I improve my gluten-free cookie texture? ›

Give xanthan gum a try – This is a very common bonding agent in gluten-free baked foods. If your recipes tend to crumble too much then add some xanthan gum to the ingredients and you will get much better elasticity. These tips are amazing for improving the texture and taste of your gluten-free foods.

How do you make gluten-free cookies not dry? ›

Use a Binder. Binders like xanthan gum and guar gum provide structure in gluten-free baking to make up for the missing gluten. This prevents cookies from being too crumbly plus it also helps with freshness.

Should I add xanthan gum to gluten-free cookies? ›

Using xanthan gum helps provide some of the stickiness that gluten free goods lack, replacing some elasticity. Xanthan gum mimics some of gluten's most essential properties by sticking to flour and its moisture. This helps create moist goods that hold their shape after being baked.

What happens when you use gluten-free flour in cookies? ›

Gluten-free flours often contain fine starches, so they absorb more liquid than conventional flour. To address this, gluten-free recipes usually call for more liquid and produce looser batters. They may also call for a larger quantity of leavening, like baking powder, to help add volume and lighten the texture.

What flour is best for gluten-free cookies? ›

Almond flour is a grain-free, protein-rich flour that lends well to cookies, cakes, and more! Almond flour is made from blanched almonds, meaning without skins (as opposed to almond meal, which is made from raw almonds with skins). This is why it has a fluffy, light texture and pale golden color.

Should I refrigerate gluten-free cookie dough before baking? ›

Scoop the cookie dough into an airtight container then chill in the refrigerator for 24 — 48 hours. If you just can't wait, let the dough chill for at least 2 hours.

What holds gluten-free cookies together? ›

Since there is no gluten there needs to be another way to level the cookies and keep them from falling apart. If you make home made GF cookies you would need to add an extra egg or two and more baking soda. That's how I get my home made cookies to work.

Why are my gluten-free cookies dry and crumbly? ›

One of the most common gluten-free baking tips is “let your batter rest”. Letting the batter rest gives the gluten-free flours and starches more time to absorb the moisture. In theory, it will turn your dry, crumbly cakes into delicious, moist masterpieces.

Should you let gluten-free cookie dough rest? ›

Instead of proceeding directly to baking, let the gluten-free cookie dough rest for about 30 minutes at room temperature. This resting period is crucial for hydration, not leavening. During this time, gluten-free flours absorb moisture from the wet ingredients, altering the dough's texture and consistency.

Why are my gluten-free cookies falling apart? ›

Gluten-free flour is not a perfect substitute for wheat flour. Each mixture out there is designed to mostly work in certain kinds of recipe, but not in all of them. And yes, it is perfectly normal for a gluten-free cookie to be crumbly, since it is the gluten itself that holds wheat cookes together.

Do gluten-free cookies take longer to bake? ›

Gluten-free goods tend to brown faster and take longer to cook through. So they need to be baked at a slightly lower temperature, for a slightly longer time. Every recipe is different, but in general, try lowering the temperature by 25 degrees and baking the item for 15 minutes longer.

How do you get cookies to stick together? ›

Put the cookie pieces together on the baking sheet. Gently mush the edges together to "glue" the cookies into each other as they bake. Sometimes gluing the cookies together is enough, if they are interlocked and share enough edges. Sometimes though... you need to add some "tape."

How do you make cookies stick together better? ›

Binding agents are the liquid in the recipe that hold the cookie together. Examples of binding agents are eggs, milk, honey, and fruit juice. Cookies with more eggs will rise more and spread less. If you want a crispier cookie, you can replace a whole egg with just an egg white.
