It’s the perfect southern dessert, it’s popular, and delicious.I’ve never met anyone that could turn down a slice of good ole sweet potato pie. In this recipe, I’m baking two pies. As always before we can begin any recipe, we need to make sure that we have all of our ingredients.

-5 medium sized Sweet Potatoes (about 4lbs)

-1 Stick of unsalted butter

-2 Eggs

-1 Cup of Sugar

-1 Cup of Whole Milk

-1/2 Teaspoon of Cinnamon

-1 Tablespoon of Lemon or Vanilla (whichever you prefer)

Once you’ve washed your potatoes, put them in a large pot in order for them toboil on high heat for30minutes.I know that some people may bake their potatoes. However, I feel you should always boil your potatoes, because when you bake them. You run the risk of losing a great deal of your sweet potatoes once you began to peel it for your pie.

**I like to use medium sized potatoes, because the smaller ones are very stringy.**

After your sweet potatoes have boiled, and they are fork tender set them aside in a bowl. Allow your potatoes to cool a bit before you begin to peel them.

Once your potatoes have cooled, you can begin to peel the skin off of them.

After you’ve peeled your sweet potatoes, place them in a separate bowl. Chop your 1 stick ofunsalted butter into chunks and add them to your sweet potatoes. The unsalted butter should melt over the potatoes, because they are still warm.

Next, add in your 1 cup of sugar, 1/2 teaspoon of cinnamon, and a 1 tablespoon of vanilla or lemon extract. I prefer lemon because I feel it pairswell with sweet potatoes. I find that it truly enhances the flavor. However, if you’re not a fan of lemon, vanilla works just as well.

Lastly, add in your 1 cup of whole milk, and 2 eggs.

Using a mixer, mix all of your ingredients together.

When you’ve finished use a large wooden spoon to ensure, you have no lumps in your pie mixture.

Store Bought or Homemade Pie Crust?

Set your mixture aside to put your pie crust or crusts in the oven. Personally, I’ve bought my pie crusts and I’ve made them myself. It’s all about personal preference, if you have a lot of baking to do I recommend store bought to save time.

Then, cut about 4-5 slits in your pie crust, so the crust remains flat. Place the pie crusts in the oven on 325 degrees for about 10 minutes. This will ensure that the bottom of your pie crust will be done.

Remove the pie crusts from the oven and allow them to cool. Then, begin to pour your pie mixture into your crust.
