This is the best ever vegan chocolate cake in the whole world and we are going to make it here and then eat it all and then make it again and eat some more.

But before getting on the FEED ME NOW stage let’s get cozy first

As you probably already realized with this vegan apple cake, and the single serving peanut butter and jelly cupcakes I love a good vegan treat.

First because I love the fact that everyone can eat them not matter their dietary choices and restrictions (desserts for everyone!) and second because sometimes I find myself without eggs, or butter or milk and those things will never stop me from eating my fair share of treats.

That was the case when I discovered this vegan chocolate cake recipe.

I was at home without eggs and with no intentions to go to the supermarket to buy some.

Also, I was also out of milk and full of chocolate cake cravings.

I went to the kitchen and started exploring and came up with one of the best chocolate cakes I had so far.

Just to make sure it was a real great recipe and not some sort of craving miracle I whipped it up again and the result was the same, fluffy goodness, then one-third time because I’m picky like that and want to make sure that I’m always sharing a failproof recipe with you guys and again the result was mind-blowing spectacular.

So I knew I had a winner, a vegan chocolate cake winner.

Then I whipped up some chocolate frosting because vegan chocolate cake and chocolate frosting make a hot couple + they are beyond delicious.

But if you want to skip the chocolate frosting and just stay with the vegan chocolate cake feel free to do it, it’s perfect on it’s own.

So let’s get our vegan chocolate cake fix

We are going to be using vegan butter and some brown + white sugar, using both sugars and vegan butter gives it a great consistency.

However if you are feeling extra healthy this New Year you could switch the vegan butter for some coconut oil, just keep in mind that the result is less fluffy and moist (but still delicious!)

After mixing the vegan butter and the sugars until they are fluffy we are going to add plain ole water and mix it some more.

Then we will add some strong brewed coffee, you can change the coffee for more water if you don’t have coffee on hand, however, coffee helps to really bring out the chocolate flavors and makes the cake look more chocolaty (yup, it helps with the color too) so try to keep it.

Then we add a pinch of cinnamon, some baking powder and some banana pure. You know that sad banana that is sitting in the back of your fridge looking all ugly?

Well, we are going to be using it today. The riper the banana the better. And no, if you use coffee + some dark cacao powder you are barely going to notice the flavor of it once the cake is done.

Finish up by adding the cacao powder (dark, unsweetened) and the flour , mix mix mix baby until no lumps are left and take it to the oven to bake it.

Once is done, take it out, wait until is cool and frost or just eat it like that

A big spoon of vanilla ice cream to go with it or a huge glass of (vegetable) milk is almost mandatory.

For the frosting I used the ultimate vanilla frosting (a super favorite around here!) with 3 tablespoons of unsweetened cacao powder.

If you want to make it vegan too just switch the butter for vegan butter and you are all set, the result is just as delicious!

Ingredients

  • 2/3 Cup vegan butter (or traditional butter)
  • 1 Cup white sugar
  • 1/3 Cup brown sugar
  • 1 1/2 Cup water
  • 1/4 Cup strong brewed coffee
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/3 Cup banana pure
  • 1 Cup cacao powder
  • 2 Cups flour

Instructions

  1. Preheat the oven to 350 degrees. Grease and flour a cake pan.
  2. In a bowl mix the butter and sugar until light and fluffy. Pour the water and the brewwed coffee and mix for 30 seconds.
  3. Add the cinnamon, baking powder and banana puree and mix on medium speed for another minute.
  4. Add the cacao powder and the flour and mix until everything is well incorporated and there are no lumps left.
  5. Pour the cake batter in the cake pan and take to the oven. Bake for 30 minutes or until done.
  6. Remove from the oven and let it cool. Frost it with chocolate frosting, serve and enjoy
