Sourdough peach cobbler is a delightful dessert that combines the tangy flavor of sourdough with the sweetness of ripe peaches. It’s a perfect way to use up excess sourdough discard while creating a delicious treat for family and friends. This recipe can be made with your sourdough starter at any phase of its life. If you have some excess discard, great! Use that. If you just want to enjoy some homemade peach cobbler, just take what you need from your active starter! It honestly doesn’t matter, it comes out delicious either way!

Choosing the Best Peaches
When making sourdough discard peach cobbler, it’s essential to choose the right type of peaches to ensure the best flavor and texture. Look for ripe, juicy peaches that are slightly firm to the touch with a sweet fragrance. Here are some popular varieties of peaches that work well in cobbler recipes:
- Freestone Peaches: These peaches have flesh that easily separates from the pit, making them ideal for slicing and baking. They’re juicy and flavorful, perfect for peach cobbler.
- White Peaches: White peaches have a delicate, sweet flavor and a low acidity level, making them a great choice for those who prefer a milder taste in their cobbler.
- Clingstone Peaches: While clingstone peaches are a bit harder to pit and slice, they have a robust flavor and hold their shape well during baking, resulting in a more substantial cobbler filling.
- Donut Peaches: Also known as Saturn peaches, these flat, round peaches are sweet and juicy with a unique texture. They add a fun twist to traditional peach cobbler recipes.
Sourdough Discard Peach Cobbler Recipe
Ingredients:
For the Cobbler:
- 2 quarts sliced peaches (or approximately 2 pounds of peaches, peeled and sliced)
- 1/4 cup cane sugar
- 1/4 cup brown sugar
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 teaspoons arrowroot powder (or cornstarch)
For the Topping:
- 1/2 cup all-purpose flour
- 1/4 cup cane sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sourdough discard
- 6 tablespoons butter, melted
Instructions:
- Prepare the Peaches:
- If using fresh peaches, peel and slice them. You’ll need approximately 2 quarts of sliced peaches.
- In a large mixing bowl, combine the sliced peaches with cane sugar, brown sugar, cinnamon, nutmeg, lemon juice, vanilla extract, and arrowroot powder. Toss well to coat the peaches evenly. Set aside.
- Make the Topping:
- In another mixing bowl, whisk together the flour, cane sugar, brown sugar, baking powder, and salt until well combined.
- Add the sourdough discard and melted butter to the dry ingredients. Stir until well combined, it will look like a sticky dough. Set aside.
- Assemble the Cobbler:
- Preheat your oven to 425°F (220°C).
- Grease an 8×8 inch baking dish or casserole dish with butter or cooking spray.
- Spread the prepared peach mixture evenly into the bottom of the baking dish.
- Add the Topping:
- Using a spoon or your hands, drop dollops of the topping mixture over the peaches until they are completely covered.
- Bake the Cobbler:
- Place the assembled cobbler in the preheated oven.
- Bake for 30 to 35 minutes, or until the topping is golden brown and the peach filling is bubbly around the edges.
- Serve and Enjoy:
- Remove the cobbler from the oven and let it cool slightly.
- Serve warm with a scoop of ice cream or a dollop of whipped cream for a delightful treat!

Sourdough Discard Peach Cobbler
A delicious summer treat, anytime of the year! Combine your excess sourdough discard to make this sweet and tangy combination!

For the Cobbler:
- 1/4 cup cane sugar
- 1/4 cup brown sugar
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 2 teaspoons arrowroot powder or cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 quarts sliced peaches or approximately 2 pounds of peaches, peeled and sliced
