Choosing the Best Peaches

When making sourdough discard peach cobbler, it’s essential to choose the right type of peaches to ensure the best flavor and texture. Look for ripe, juicy peaches that are slightly firm to the touch with a sweet fragrance. Here are some popular varieties of peaches that work well in cobbler recipes:

  1. Freestone Peaches: These peaches have flesh that easily separates from the pit, making them ideal for slicing and baking. They’re juicy and flavorful, perfect for peach cobbler.
  2. White Peaches: White peaches have a delicate, sweet flavor and a low acidity level, making them a great choice for those who prefer a milder taste in their cobbler.
  3. Clingstone Peaches: While clingstone peaches are a bit harder to pit and slice, they have a robust flavor and hold their shape well during baking, resulting in a more substantial cobbler filling.
  4. Donut Peaches: Also known as Saturn peaches, these flat, round peaches are sweet and juicy with a unique texture. They add a fun twist to traditional peach cobbler recipes.

Storing and Preserving Peach Cobbler

Once you’ve baked a delicious sourdough discard peach cobbler, you’ll want to know how to store and preserve any leftovers to enjoy later. Here are some tips to help you keep your cobbler fresh:

Refrigeration:

  • If you have leftover cobbler that you plan to eat within a few days, store it in an airtight container or cover it tightly with plastic wrap.
  • Place the cobbler in the refrigerator and consume within 3 to 4 days for the best quality.

Freezing:

  • Peach cobbler can also be frozen for longer-term storage. However, keep in mind that the texture of the topping may change slightly upon thawing.
  • Allow the cobbler to cool completely before freezing to prevent condensation and soggy crust.
  • Once cooled, wrap the entire cobbler dish tightly in plastic wrap, followed by a layer of aluminum foil to prevent freezer burn.
  • Alternatively, you can portion the cobbler into individual servings and freeze them in freezer-safe containers or zip-top bags.
  • Frozen peach cobbler can be stored for up to 3 months.

Reheating:

  • To reheat refrigerated cobbler, simply place it in a preheated oven at 350°F (175°C) for about 15 to 20 minutes, or until heated through.
  • If reheating frozen cobbler, allow it to thaw in the refrigerator overnight before reheating as directed above.
  • You can also reheat individual portions of frozen cobbler in the microwave on a microwave-safe plate for quick and convenient serving.

Whether you’re using fresh, ripe peaches or canned peaches, sourdough discard peach cobbler is a delicious dessert that captures the essence of summer in every bite. Experiment with different peach varieties and preservation methods to create your perfect cobbler recipe.
